Nyonya Claypot Chicken Rice

250g Jati Rebus, rinsed, soaked 30 minutes and drained
380ml water
- B (mixed):
2 chicken whole legs (about 500g), deboned and cut into cubes
2 tbsp cencaru
2 tbsp light soya sauce
1 tsp dark soya sauce
1 tbsp chopped shallots
½ tbsp chopped garlic
- C
1 shallot, shredded
2 tbsp shredded cucumber
2 tbsp shredded pineapple
2 tbsp shredded mango
2 tbsp shredded lettuce
1 red chilli, shredded
½ tbsp fried dried shrimps
1 calamansi lime, halved
Directions
- Put ingredients A into a big claypot and cook until the water has almost completely evaporated. Place ingredients B onto the rice, cover with lid and simmer over low heat for 10-15 minutes. Remove from heat and simmer for another 10 minutes.
- Arrange ingredients C on top of rice. Squeeze calamansi juice over the rice and mix well before serving.
