MethodRinse lotus leaf in hot water and remove at once, wipe dry.Wash and soak glutinous rice in water for about 3 hours.Cut chicken into small pieces and marinate with seasoning. Shred ginger.Wash and drain dried shrimps. Soak and trim mushrooms, squeeze out excess water.Spread out lotus leaf. Place it on 3 tbsps glutinous rice and top with chicken pieces, dried shrimps, mushrooms and ginger shreds. Then cover with glutinous rice. Wrap well and steam for about 45 mins. Serve.
