Festive Chinese Preserved Meat Rice

Ingredients A

  • 300g Jati 100% Sorted Parboiled Rice, rinsed and drained
  • 450ml water
  • 100g Chinese preserved meat
  • 1 pair Chinese sausage, deep-fried for 10 seconds
  • 1 pair Chinese liver sausage, deep-fried for 10 seconds

Ingredients B

  • 1 ½ tbsp light soya sauce
  • 1 tbsp oyster sauce
  • ½ tbsp dark soya sauce
  • ½ tbsp sesame oil
  • 1 tbsp shaoxing wine
  • ½ tbsp sugar
  • ½ tsp chicken stock granules
  • ½ tsp pepper
  • 1 tsp chopped ginger
  • 1 tbsp chopped garlic

Ingredients C

  • 2 tbsp diced spring onion

Method

  • Rinse the rice and soak into 450ml water for 30 minutes.
  • Pour the soaked rice and water into a claypot. Cover with lid and bring to boil using high heat. Lower the heat and cook until water has almost completely evaporated. Arrange Chinese preserved meat, Chinese sausage and Chinese liver sausage on top of rice
  • Remove the preserved meat, sausages from claypot and cut into slices. Arrange them onto a serving platter.
  • Pour the sauce over hot rice and sprinkle spring onion on top. Serve with preserved meat and sausages.
