Nasi Ulam

For nasi ulam, I prefer to use basmati rice as the rice is drier and less sticky, fluffy, and nutty in flavor compared to Thai jasmine rice.

Nyonya Claypot Chicken Rice

Put ingredients A into a big claypot and cook until the water has almost completely evaporated. Place ingredients B onto the rice, cover with lid and simmer over low heat for 10-15 minutes. Remove from heat and simmer for another 10 minutes.

Osmanthus Brown Rice
  • Complexity: easy

Osmanthus Brown Rice

Soak the osmanthus wish hot water for about 10 minutes, then filter the water to removes the petals.

Shiitake Mushroom Fried Rice
  • Complexity: easy

Shiitake Mushroom Fried Rice

Start to make mushroom paste with ingredients B first. Heat up saucepan over medium heat; add in oil and sauté onion and garlic for 10 minutes. 

  • Complexity: advanced

Spicy Kimchi Fried Rice

For best results, use leftover rice, or cook rice with some extra water, drain excess water and spread rice on a plate uncovered dry out while you cook onion and kimchi.

Tuna & Avocado Brown Rice Bowl

fumi furikake is a Japanese rice seasoning. If you can't find this in your local Japanese grocer, substitute with a pinch or so each of shredded nori (seaweed for wrapping sushi), bonito flakes & sesame seeds
