Ingredients A

  • 450g ecoBrown's Gold rice (washed & soaked for 1 hour)
  • 1 tbsp cooking oil, 1 clove garlic(chopped), 125ml water, 8g tong kwai, 20g yuk chuk, 1 heaped tbsp kei chi
  • 16 pcs chicken breast meat(cut into 2cm lengths each)
  • 8pcs dried chinese mushroom(soaked)
  • 8pcs dried chestnut(soaked and boiled till soft)
  • 1 tbsp oyster sauce, 1/2tsp dark soya sauce, 1/2 tsp ground white pepper, 1/2 tsp chinese 5 pices, 1 tsp salt to taste:
  • 20 pcs dried bamboo leaves(boiled, washed & soaked)
  • bamboo hemp string(soaked)

Method

  • Heat oil, saute garlic until fragrant.
  • Add water & the herbs,bring to a boil & simmer for 5 minutes.
  • Add chicken & seasonings. Turn off heat & let pork marinate in herbal mixture for 30 minutes or more before wrapping.
  • Drain ecoBrown's Gold rice in a colander, mix rice with some salt.
  • Take 2 washed bamboo leaves and form a cone.
  • Line cone with about 1 tablespoon ecoBrown's Gold rice, spreading out.

  • Stuff in 2 pieces of chicken meat, one chinese mushroom and one chestnut, cover with 1 tbsp ecoBrown's Gold rice.Press down to compress dumpling and wrap up.
  • Tie tightly with a hemp string.Repeat till all dumplings are tie up.
  • Bring a large pot of water to a boil,adding salt to the boiling water, immerse these dumplings in the boiling water for 2 hours.
